Baked Apple and Cinnamon Porridge
This heart warming recipe is so worth the prep, it's like having an apple crumble for breakfast! Make a batch of stewed apple and soaked oats and leave them in the fridge for up to 3 days. Then, each morning combine a portion together in an oven proof dish and bake for 20 minutes whilst you're in the shower and getting ready. Then enjoy a warming wholesome breakfast.
- Chop 2 brambly apples, and stick in a pan. Sprinkle over some cinnamon and a drizzle of honey and then pour boiling water over just to the top of the apples. Put the lid on the pan and simmer for 15-20minutes until you have stewed fruit consistency.
- While this is simmering prepare your oats. Pour enough oats in a bowl for the next 3 days and sprinkle with more cinnamon, raisins and some flaked almonds and mix the dry ingredients together. I now like to add some vanilla extract and almond butter then mix all together with almond milk. Pour over enough almond milk to just cover the oats. Leave in the fridge over night.
- Once the apple stew is cooked place in a tupperwear and store in the fridge (can also be frozen).
- When you want your breakfast, mix some oats and apple stew together and place in the oven for 15-20mins. At the end I like to grill it to get a nice crispy topping. If you like, serve with coconut yoghurt for extra creaminess.
