Gooey Halloumi Summer Salad

Serves 2

Ingredients:

Olive Oil
1 garlic clove
1/2 butternut squash
1/2 red cabbage
1/2 red onion
Sea salt & black pepper to taste
100g Halloumi
Sumac (to spinkle to taste)
1/2 lemon to squeeze for dressing
Chopped mint leaves for topping

  1. Pre heat the oven to 200C

  2. In a baking tray add: chopped butternut squash, red cabbage (chopped into 1cm pieces), red onion (chopped into large wedges), crushed garlic, salt and pepper to taste. Drizzle with olive oil to coat and give it all a good mix.

  3. Put in the oven for 25 minutes (check in at 20 and stir and put back in).

  4. Take the veggies out the oven and add sliced halloumi on top. Put back in the oven for another 15 minutes.

  5. Serve into bowls and top with a sprinkling of sumac, a squeeze of lemon and ripped mint leaves.
