Courgetti with Homemade Pasta Sauce
A lovely and quick comforting dinner that is great alone or, like I have done in the photo above you could add griddled chicken or perhaps some griddled haloumi...
If you don't have a spiraliser (I don't either) you can use a vegetable peeler and then slice the courgetti really fine from there.
(serves 4) - but it is great the next day for lunch so it's always good to make extra.
Ingredients:
- coconut oil
- 1 onion chopped finely
- 3 garlic cloves grated
- 1 finely chopped chilli
- 20 cherry tomatoes halved
- 1 tbsp tomato puree
- 1 tbsp tahini
- a handful of fresh basil
- juice of 1/2 lemon
- 4 courgettes (cut thinly with a peeler or spiralised)
- a handful toasted pinenuts
- salt and pepper
- some cheese (feta or parmesan)
Method:
- sauce the onion, garlic and chilli in the coconut oil for a few minutes
- then add the tomatoes, tomato puree, tahini and basil. Stir well then add the lemon juice, and a little bit of water and then tip the courgetti into the pan.
- Once the courgetti is soft, season it all with salt and pepper, scatter over the toasted pine nuts and cheese and serve.
